A refreshing Apple Pecan Salad featuring crisp apples, toasted pecans, creamy blue cheese, and a tangy maple dressing. Ready in just 15 minutes.

Salad Base:

  • 100g baby spinach (approx. 4 cups)
  • 1 large Honeycrisp apple, chopped
  • 56 sun-dried tomatoes, thinly sliced
  • 1 slice crispy turkey bacon, diced
  • ½ cup toasted pecans
  • ⅓ cup raisins
  • ½ cup crumbled blue cheese or feta

Dressing:

  • 2 tablespoons apple cider vinegar
  • 2 tablespoons maple syrup
  • 1 teaspoon Dijon mustard
  • 3 tablespoons olive oil
  • Salt and black pepper, to taste

Instructions

  1. Toast the Pecans:Heat a skillet on medium. Place pecans in a single layer, stirring occasionally until golden brown and fragrant, about 5 minutes. Remove from heat to cool.
  2. Prepare the Dressing:Combine apple cider vinegar, maple syrup, and Dijon mustard in a small bowl. Gradually whisk in olive oil until smooth. Add salt and pepper as needed.
  3. Prep Ingredients:Rinse spinach and pat it dry. Dice the apple into bite-sized pieces. Slice sun-dried tomatoes, crumble bacon, and prepare the cheese.
  4. Assemble the Salad:In a large bowl, layer spinach, apples, raisins, sun-dried tomatoes, and turkey bacon. Sprinkle toasted pecans and cheese over the top.
  5. Add Dressing:Drizzle dressing evenly and toss gently to combine. Serve immediately for the freshest taste.
