These cookies are a holiday classic for a reason! They have a soft, fudgy brownie-like inside and a crisp, snow-dusted exterior. With our no-chill method, you can have a batch of these beautiful cookies ready in no time.

Ingredients

  • 1 cup granulated sugar
  • ¼ cup vegetable or canola oil
  • ½ cup cocoa powder
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup powdered sugar, for coating

Instructions

  1. Mix Wet Ingredients: In a stand mixer, beat the granulated sugar and oil until smooth. Add the cocoa powder and mix. Then, beat in the eggs and vanilla until the mixture is a thick, glossy paste.
  2. Add Dry Ingredients: On low speed, mix in the flour, baking powder, and salt. Stop mixing as soon as the flour disappears. Over-mixing will make the cookies tough.
  3. Chill the Dough: The dough will be very sticky. Transfer it to an airtight container and refrigerate for at least 3 hours. This is key for that perfect crinkle!
  4. Roll and Coat: Preheat your oven to 350°F (175°C). Pour the powdered sugar into a bowl. Scoop the chilled dough, roll it into a 1-inch ball, and give it a generous roll in the powdered sugar to completely coat it.
  5. Bake: Place the coated balls on a parchment-lined baking sheet, about 2 inches apart. Bake for 10-11 minutes. The cookies are ready when the edges are set and the centers still look a little soft. Do not over-bake!

  • Serving: These cookies are amazing with a cold glass of milk, hot cocoa, or a cup of coffee.
  • Storage: Store the completely cooled cookies in an airtight container at room temperature for 3-4 days. They’ll stay soft and delicious.
