  • 1 cup farfalle pasta (or other short pasta)

  • 6 black olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/2 red onion, diced

For the dressing:

  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tbsp red wine vinegar (or apple cider vinegar)
  • 1 tbsp dried oregano
  • 2 cloves garlic, minced
  • 2 tbsp honey (or maple syrup for vegan)
  • Salt and pepper, to taste
  • Fresh parsley (optional, for garnish)

Instructions

Step 1: Cook the Pasta

  1. Boil a pot of salted water. Add farfalle and cook for 8 minutes until al dente.
  2. Drain and rinse with cold water to cool it down quickly. Set aside.

Step 2: Prep the Veggies

  1. Dice cucumber, bell pepper, and onion. Halve the tomatoes and slice the olives.
  2. For milder onion flavor, soak the diced onion in cold water for 5 minutes.

Step 3: Make the Dressing

  1. Combine olive oil, lemon juice, vinegar, oregano, garlic, honey, salt, and pepper in a small bowl.
  2. Whisk thoroughly until smooth and emulsified.

Step 4: Assemble the Salad

  1. Mix cooked pasta, prepared veggies, and feta cheese in a large bowl.
  2. Pour the dressing and toss well until everything is evenly coated.
  3. Let sit for 15 minutes before serving to enhance the flavors.
