Crispy on the outside, juicy and flavorful on the inside, these fried shrimp wontons are the perfect appetizer or snack. Paired with a sweet chili-Sriracha dipping sauce, they’re quick to make and absolutely irresistible!
In a mixing bowl, combine chopped shrimp, spring onion, black pepper, corn starch, egg yolk, soy sauce, fish sauce, oyster sauce, sesame oil, grated carrot, and minced garlic. Mix until evenly combined. Let it sit for a few minutes to enhance the flavors.
Place a wonton wrapper on a clean surface. Add about 1 teaspoon of filling to the center. Brush the edges lightly with egg yolk and fold diagonally into a triangle. Press firmly to seal. For extra security, pinch the two bottom corners together.
Heat oil in a frying pan over medium heat (around 350°F/175°C). Fry wontons in small batches for about 2–3 minutes per side or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
In a small bowl, mix sweet chili sauce and Sriracha. Adjust spice level to taste. Serve alongside the wontons for dipping.

Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in an air fryer or oven at 350°F (175°C) for about 5 minutes to retain crispiness. For make-ahead prep, freeze uncooked wontons on a tray until solid, then transfer to freezer bags. Fry directly from frozen when ready to serve.
