This is my go-to recipe for a reason! It’s a vibrant, no-cook salad that’s the perfect mix of creamy avocado, sweet mango, and a zesty lemon dressing. It’s a guaranteed hit at any BBQ or potluck, and it’s my favorite way to bring a little sunshine to the table on a hot day.

For the Salad:

  • 2 medium ripe avocados, diced
  • 1 large ripe mango, diced
  • 1 cup cherry tomatoes, halved
  • ½ medium red onion, thinly sliced
  • ½ cup fresh basil, thinly sliced (chiffonade)

For the Lemon Vinaigrette:

  • 2 tbsp extra virgin olive oil
  • 1 ½ tbsp freshly squeezed lemon juice
  • ½ tsp lemon zest
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. Soak the Onion: Place the thinly sliced red onion in a small bowl of cold water. Let it soak for about 10 minutes while you prep everything else. This is the secret to a milder onion flavor!
  2. Combine Ingredients: In a large mixing bowl, combine the diced mango, halved cherry tomatoes, and sliced fresh basil.
  3. Make the Dressing: In a small jar, add all the vinaigrette ingredients. Seal the lid tightly and shake vigorously for about 20 seconds until the dressing is creamy and combined.
  4. Finish the Salad: Drain the onions well and add them to the large bowl. Add the freshly diced avocado. Pour the dressing over top and use a spatula to gently fold everything together until just coated. Be careful not to mash the avocado!

  • Tips & Tricks: For the best salad, dice your avocado right before you toss everything together to keep it bright green. And trust me, using a fresh lemon for the juice and zest makes all the difference!

  • Storage: This salad is best enjoyed immediately. If you have leftovers, store them in an airtight container in the fridge for up to one day. The avocado may brown a little. Do not freeze this salad!
